Chongqing Food Guide: Hotpot, Xiaomian and What to Order

Three dishes to start with, the spice questions worth asking, and Chinese phrases you can show at the table.

Jump to the Chinese ordering phrases ↓

You do not need a list of twenty dishes for your first day in Chongqing. A bowl of xiaomian, a hotpot dinner and perhaps a cup of sour-spicy noodles will give you plenty to choose from. The harder question is usually how to order the version you actually want to eat.

Start with the chilli. If you want less of it, say so before the order goes through—not when a red bowl arrives. Keep the Chinese dish names below on your phone; they are more useful at the counter than another restaurant ranking.

Three Chongqing foods to start with

Food Chinese menu name What to expect Ask before ordering
Hotpot 重庆火锅 A shared pot of broth with ingredients ordered separately Can we have a split pot? What does the broth cost?
Xiaomian 重庆小面 A noodle bowl with chilli, Sichuan pepper and other seasonings Can you use less chilli and less Sichuan pepper?
Suanlafen 酸辣粉 Sour, spicy starch noodles, often made from sweet potato What toppings come with it? Can you leave out the chilli?

These are dish names, not fixed recipes. A photograph on a menu cannot tell you everything in the broth, sauce or garnish.

Chongqing hotpot: choose the broth before the ingredients

With Chongqing hotpot, choose the broth first. The red version gets its heat from chilli, its numbing edge from Sichuan pepper and, in many traditional recipes, its richness from beef tallow. The ingredients arrive separately for you to cook at the table. iChongqing's hotpot introduction gives the background to those seasonings.

If your group has different preferences, ask whether the restaurant offers a divided pot, called yuanyang guo (鸳鸯锅). One side can be spicy and the other a different broth. Ask what that second broth contains; "clear" does not mean vegetarian.

Before you point at a long list of ingredients, check four things:

  • The broth charge: is it per pot, and is the divided version priced differently?
  • Whether dipping sauces are included or charged separately.
  • How large each plate is. Order a few plates first rather than one of everything.
  • Whether the table has a paper menu if the QR ordering screen is difficult to use.

Start with a few plates you recognize: sliced beef, mushrooms or vegetables, depending on what you eat. You can always add more. Offal appears on many hotpot menus; point and ask if you are unsure, rather than treating every unfamiliar plate as something you have to try.

Ask staff how to cook each ingredient. One timing rule does not work for everything in the pot. If you have a dietary restriction, discuss the broth, dipping sauce and preparation as well as the plates you choose.

Xiaomian: a noodle bowl, not a small hotpot

Xiaomian translates as "small noodles," not "a little spicy." It is a bowl of noodles dressed with seasonings, sometimes served with broth and sometimes with much less liquid. iChongqing's noodle guide describes both styles.

On the menu, niurou mian (牛肉面) means beef noodles. Wanzamian (豌杂面) has peas and a minced-meat topping; these variations also appear in iChongqing's xiaomian overview. Point to the name of the bowl you want, then ask about the seasoning.

Chilli heat and the numbing sensation from Sichuan pepper are different. Saying "less spicy" may not make both of them milder. Be specific:

少放辣椒,少放花椒。
Please use less chilli and less Sichuan pepper.

If you want no chilli at all, try 不要放辣椒 (Please do not add chilli) and ask whether the base seasoning already contains it. A request is not a guarantee that every part of the recipe can be changed.

An egg in the menu photograph may cost extra. Ask before ordering. One bowl is a sensible place to start; you can decide about sides once you see the portion.

Suanlafen: a sour-spicy snack, not a mild alternative

Suanlafen means sour-and-spicy noodles. It is another Chongqing specialty, alongside hotpot and xiaomian, noted in iChongqing's overview of local food. Sweet-potato starch is one traditional noodle ingredient; the municipal region's Pengshui food introduction discusses its use.

A bowl of suanlafen works as a separate snack stop, not another shared-table dinner. Do not mistake "sour" for "mild": the chilli is still there unless the shop can leave it out.

Ask about the toppings and whether the seasoning can be changed. Noodles without visible meat are not necessarily vegetarian: the stock, sauce and garnish still matter.

这碗粉有什么配料?可以不放辣椒吗?
What toppings are in this bowl? Can you leave out the chilli?

Where to start looking for food in Chongqing

Pick a food stop near something already on your day's route. A good lunch does not need three river crossings and a queue at a second branch.

Near Jiefangbei: if you are staying in the central shopping area, look nearby first. Save the restaurant's Chinese name and branch address. An English name alone may send you to another location.

Around Hongyadong: decide whether the view is part of the meal you want. A river-view table is not evidence of better food. Confirm the restaurant's entrance and floor before going; the pin on your map may not tell you which level to enter.

At Ciqikou: leave room for a snack if the historic town is already on your route. It does not need to become a separate cross-city food trip. Check portion size and price before buying.

This is an area-based starting point, not a list of personally tested restaurants. Restaurant branches, menus and opening hours change. Confirm them with the business before making a special journey.

How to order when you do not speak Chinese

Save these sentences before you sit down. Show the server the one question you need answered, rather than handing over a screen full of requests.

What you need Chinese to show
A paper menu 可以给我看一下纸质菜单吗?
No chilli 请不要放辣椒。
Less Sichuan pepper 请少放花椒。
Ingredients in a dish 这道菜有哪些食材?
Broth and sauce charges 锅底和蘸料分别多少钱?
A smaller first order 我们先点这些,不够再加。

For a straightforward meal, the dish name and one or two questions may be enough. The Chongqing guide to visiting without Chinese has more help with addresses and meeting points if getting to the restaurant is the awkward part.

For dietary restrictions, ask about stock, oil and sauces rather than relying on the dish name. These phrases help you ask questions; they do not certify what a kitchen can provide.

A simple first-day food plan

Try xiaomian for one meal and leave the evening open for hotpot. Add suanlafen only if you are hungry and pass somewhere that sells it. You can eat it tomorrow; this is dinner, not homework.

If hotpot does not suit your group, choose another restaurant. "Eating locally" does not require ordering a red broth you will not enjoy.

For the bill, use the restaurant's current menu. A noodle bowl is easy to price; a hotpot table has more moving parts. Ask about the broth, ingredient plates and extras rather than relying on a single "average meal price" copied from a travel guide.

Questions people ask about Chongqing food

What food is Chongqing famous for?

Hotpot and xiaomian are good starting points. Suanlafen adds a sour-spicy snack option. Choose by appetite and spice preference rather than trying to complete a ranking.

Can you eat in Chongqing if you do not like spicy food?

Yes. Ask which dishes can be made without chilli and whether a non-spicy broth is available. Do not assume that "mild" and "no chilli" mean the same thing. Confirm the ingredients before ordering.

Do you need a guide to order food in Chongqing?

Not for every meal. A saved dish name and a few clear questions may be enough. If you want help with restaurant communication, compare Chongqing local-support profiles and confirm what the person can do, their availability and the fee. A bilingual profile does not automatically include a guided food tour.
